			<content:encoded><![CDATA[<p>This is a brand new category in Village Earth.  I am still a novice in making conscious choices about food and diet, even though I have been experimenting for several years.  Like you, I am striving for progress and I am far from perfect.</p>
<p>Our household is in the process of switching over to a completely vegetarian diet which consists mostly of raw vegetables.  The diet that I have chosen to work with for right now is &#8220;Raw Food Life Force Energy&#8221; by Natalia Rose.  Her recipes are delicious and easy and extremely flexible.  While we are going through the transition to completely vegetarian we can choose to have meat once or twice per week, but the food is so satisfying that our cravings for animal flesh is minimal and can usually be taken care of with fish.  My energy has gone through the roof, my skin and hair are glowing, and I am dropping pounds effortlessly.</p>
<p>After reading &#8220;Raw Food Life Force Energy&#8221; I have been able to put together some of my own delicious recipes.  Thought I would share a recipe with you that I prepared this morning for breakfast.  The ingredient quinoa (pronounced KEEN&#8217;-wah) is a grain from South America and is grown at 12,000+ feet above sea level.  It contains tons of protein and amino acids, and 1/4 cup contains about 10% of the total daily cholesterol.  There are lots of sites on Google that can tell you all about it.  It is even delicious all by itself.</p>
<p>Ingredients:</p>
<p>Organic quinoaThe brand I use right now is truRoots.</p>
<p>Fresh organic grape tomatoes, chopped finely</p>
<p>Fresh organic leeks (only use the white part), finely diced</p>
<p>Freah cilantro, 3-4 TBSP</p>
<p>Fresh organic avocado, diced</p>
<p>1 tsp. organic ghee</p>
<p>Dash of Pickapeppa Gingery Mango Sauce</p>
<p>Preparation: (takes about 10 minutes)</p>
<p>On medium- low heat, cook the quinoa in a tsp. of ghee in a saucepan until it starts to pop and smell like popcorn.  Reduce the heat to low and add double to triple the amount of water as quinoa.  Ratio 1:2-3.  I like my quinoa a little softer so I use triple the amount of water to quinoa.  Finely dice the leek and add to the quinoa and cover.  Simmer for appr. 10 minutes.  Try to resist the temptation to lift the lid.</p>
<p>While the quinoa is simmering, chop up the tomatoes, and avocado.  Do not add these ingredients while the quinoa is cooking.</p>
<p>Now you can check the sauce pot to see if all of the liquid is gone.  If all of the liquid is gone, add the cilantro, tomatoes and avocado and gently stir.</p>
<p>When serving let each person add the Pickapeppa to their own dietary and palate preference.  This is not hot or spicy, just flavorful. YUM!</p>
<p>Word of warning &#8211; I live in California and many of the foods here are a bit spicy so what is not spicy to me may be very spicy to you.</p>
<p>The colors in this meal are beautiful!  Next time I prepare this I will take a picture of it &#8211; - I started eating it and couldn&#8217;t stop long enough to get a pic for you!</p>
